How To Make It

  1. Heat the red palm oil in a pot until it loosens, then add sliced onions and fry until fragrant.
  2. Stir in your blended pepper mix and fry for 5–7 minutes until the raw smell disappears.
  3. Add your cooked assorted meat or fish, along with a bit of stock, and let it simmer for 5 minutes.
  4. Spoon in the Egusi in small lumps — don’t stir immediately. Let it fry undisturbed for 3–4 minutes to form that signature texture.
  5. Break up the lumps gently, add crayfish powder, stock cubes, and salt, then let it simmer for 10 minutes.
  6. Fold in your leafy greens, simmer for 3 more minutes, and serve hot with pounded yam or fufu.
